3 CHEESE POTATO CASSEROLE

INGREDIENTS
5 large potatoes
1 large onion, sliced
1/2 tbsp flour
1 tbsp butter
1 cup milk
1/4 cup smoked Gouda cheese
1/4 cup Cheddar cheese
1/4 cup Parmesan cheese
1 tsp chives
Salt to taste
Pepper to taste

METHOD
• Pre heat oven to 350 f
• Slice potatoes
• Mix all ingredients together and bake for 45 minuets

BARBECUED CHICKEN

INGREDIENTS
1 whole chicken
8 cloves garlic
6 stalks chives
1/4 cup shadon benni
1 sprig fresh thyme or 1 tsp dried thyme
1 tbsp vinegar

DRY INGREDIENTS
6 tbsp salt
2 tsp sugar
1 tsp black pepper
BAR-B-QUE SAUCE
1/4 cup wine
1/2 cup granulated sugar
1 tsp salt
1 tsp dry mustard
2 cups ketchup
2 tbsp shadon benni
1/2 cup tomato paste
1 tsp paprika
1 tsp black pepper
2 tbsp oil or margarine

METHOD
• Mix all ingredients for bar-b-cue sauce in a saucepan.
• Simmer for 15 minutes and then cool. Set aside.
• Cut chickens in quarters, rinse in lime water (do not squeeze lime on chicken in water) and drain before adding seasoning.
• Blend garlic, chives, shadon benni, and thyme with 1 tsp vinegar. (It is better not to mix the seasonings together so use green seasoning before using dry seasoning).
• Rub in dry seasoning and leave for at least two hours or overnight.
• Pour bar-b-cue sauce over chicken and leave to marinate for at least two hours.
• When ready to bar-b-cue, light the coals.
• Burn until coal appears white (no coal should have a flame). Put chicken on grill. There should be enough space between the coal and the chicken.
• Grill skin side down, turning frequently with a pair of tongs to prevent burning. Do not pierce chicken.
• Set cooked chicken aside, on grill, so it keeps hot and completes the cooking process.

COFFEE CAKE

INGREDIENTS
1/2 cup salad oil or melted shortening
1 beaten egg
1/2 cup milk 4 tbsp coffee
1 1/2 cup sifted flour
3/4 cup sugar
3 tsp baking powder
1/2 tsp salt
TOPPING
1/2 cup brown sugar
1 tbsp flour
1 tsp cinnamon
1 tbsp melted butter
1/2 cup broken nuts

METHOD
• Combine brown sugar, flour, cinnamon, melted butter and broken nuts for topping and set aside.
• Preheat oven to 375 F about 15 minutes.
• Grease 9x9x2 inch pan.
• Combine salad oil, egg and milk.
• Sift together dry ingredients.
• Add milk mixture to dry ingredients and pour into greased pan.
• Sprinkle topping over batter and bake for about 25 minutes or until done.
